“Lets Eat”

I want to start with something simple, everyone loves simple. This may be a little time-consuming but the result is well worth it. There aren’t many things more homely or delicious than homemade chicken soup.

Here we go: You will need a 12 quart soup pot.

  • 8 lbs of chicken (I find that a whole baby chicken and chicken breasts fit best into the pot, also there is a bag inside the chicken, the neck bone is extremely flavorful)
  • 1 lb of veggies you like (I like to use celery, carrots, onions & turnips)
  • Herbs of your choice (I grow my own dill, thyme and sage so I use those)
  • S&P to taste
  • 2 large bay leaves
  • You can add worchestire, hot sauce or a jalapeno for heat and anything else you may like. I like to add a ginger root every once in a while to give it more of a sweet flavor.

 

Add the chicken to the pot and fill with 10 quarts of water. To begin with add 1/4 cup of kosher salt and both bay leaves. Bring to a boil skimming the top when necessary. Cook for two hours on low heat. Add veggies and fresh herbs, continue to cook for another hour. Strain contents into another bowl/pot for storage and sit in ice bath stirring until soup begins to gel. Store and enjoy!!!
